3 Easy BBQ Recipes for a Camping Trip

One of the best things about camping is being able to spend some time with friends and family while being surrounded by nature.

You may think that cooking hearty warm meals are reserved for your kitchen; however it’s possible to create some real masterpieces on a disposable BBQ. We’ve put together three really quick and easy recipes you can cook while at Crows Nest – just unfold a camping table, pitch your awnings, and get the coals going. 

Couscous Stuffed Red Pepper

4 red peppers, halved
110g couscous
110ml of boiling vegetable stock
Tin of Bean Salad

1. To prepare your peppers, remove the green stalk bases and slice vertically. Scoop out the core and seeds.
2. Put your couscous in a heatproof bowl and pour over the hot vegetable stock to rehydrate.
3. Leave for 5-10 minutes, or until the couscous is soft. Fluff with a fork.
4. Add a can of bean salad, and season with salt and pepper if you like.
5. Spoon the mixture into your pepper halves and place on the BBQ.
6. Cook for 10 minutes, and then serve with salad or some roast vegetables.

Kebab Skewers

900g of chicken thighs, diced
2 tbsp soy sauce
2 tbsp olive oil
1 tbsp honey
1 tsp oregano
3 garlic cloves
½ lemon, juiced
2 bell peppers
1 courgette
1 onion, diced

1. In a wide rimmed bowl, mix together the soy sauce, olive oil, oregano, garlic cloves and honey to create your glaze.
2. Arrange the meat and peppers, courgette and onion onto the skewers.
3. Dip your skewers into the glaze before placing on the BBQ.
4. Turn the meat around every few minutes, brushing your glazing before turning the meat around.
5. After 15 minutes, or when the chicken is thoroughly cooked, remove from the heat and serve with some potato salad or pita bread.

Fish in Foil

4 fish fillets
2 lemons, sliced
Sprigs of thyme, to taste
4 tbsp of butter

1. Place each fillet onto a large sheet of foil.
2. Divide the butter into four equal pieces and put on top of each fillet.
3. Add the lemon slices, thyme, and season to taste.
4. Wrap the fish up, ensuring you have no gaps in your parcel. You may want to use another sheet and wrap it a second time.
5. BBQ for 8 minutes per side. The fish will be ready once the flesh is opaque and flakes easily.
